Smokey Chipotle Pulled Pork Ragu with Pappardelle

The ultimate comfort food! There’s nothing better than a rich, warm bowl of pasta, and this recipe uses our Smokey Chipotle Ready-to-Heat Pulled Pork for an extra kick of flavour and a unique twist on your usual Italian pasta recipe.
INGREDIENTS
1x 450g pack of Smokey Chipotle Ready-to-Heat Pulled Pork
500g dried pappardelle
1 tablespoon olive oil
1 small onion, chopped
4 cloves garlic
1/2 cup red wine
2 cups crushed tomatoes
1/4 teaspoon black pepper
1/2 teaspoon kosher salt
Handful of chopped parsley
1 cup shredded parmesan cheese
METHOD
- Bring a large pot of water to a boil and cook pappardelle according to package directions.
- Prepare Pulled Pork as per package instructions.
- While pasta is cooking and pulled pork is heating, heat olive oil in a large saucepan over medium heat. Cook onion and garlic until onions have softened and started to brown, about 5 minutes.
- Add red wine to deglaze the pan. Be sure to scrape up any of the brown bits that have stuck to the bottom of the pan.
- Pour in crushed tomatoes. Season with salt and pepper. Add in pulled pork and mix well.
- Continue cooking for 5–10 more minutes or until sauce is warmed through.
- Add cooked pappardelle and toss to combine. Portion into pasta bowls and sprinkle with chopped parsley and parmesan cheese to finish.
- Drizzle with olive oil and serve
