Cooking tip: Cooking times may vary depending on the thickness of the steaks and your appliance. For the juiciest result, avoid overcooking and allow the pork to rest before serving.

Is pork scotch fillet the same as pork fillet?
No. Pork scotch fillet and pork fillet are different cuts. Pork scotch fillet is a tender, flavourful steak cut with more marbling, while pork fillet is a leaner cut that is commonly cooked whole, sliced for stir-fries or diced for kebabs. Both are quick-cooking cuts, but scotch fillet is particularly well suited to pan-frying, grilling and barbecuing.

How to cook pork scotch fillet steaks without drying them out?
Cook pork scotch fillet steaks over medium heat and avoid overcooking them. Linley Valley Pork recommends cooking scotch fillet steaks for around 6 minutes on the first side, 2-3 minutes on the second side, then allowing them to rest before serving. Resting helps the juices settle back through the meat, keeping the steaks tender and juicy. Cooking times can vary depending on the thickness of the steak.

What marinades are recommended for pork scotch fillet steak?
Pork scotch fillet works well with sweet, savoury and Asian-inspired marinades. Try a combination of soy sauce, Shaoxing wine, sesame oil and a little sugar, or use honey, apple cider vinegar, smoked paprika, garlic and onion for a sticky barbecue-style flavour. Mustard-based sauces and marinades also pair particularly well with the rich flavour of pork scotch fillet.

Is it better to fry or bake pork scotch fillet steaks?
Pan-frying is usually the better option when you want a quick meal with a golden, caramelised exterior. At Linley Valley Pork, we recommend scotch fillet steaks for pan-frying, grilling and barbecuing, with the 6-2-2 cooking method designed specifically for quick-cooking pork steaks. Oven cooking can also work well, particularly for thicker steaks or when finishing them under a hot grill, but pan-frying gives you more control over browning and cooking time.
