INGREDIENTS

  • 500g Linley Valley Pork mince
  • 30 dumpling wrappers or wonton wrappers
  • 2 garlic cloves, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 spring onions, finely chopped
  • 1 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine, optional
  • 1 tsp sesame oil
  • 1/2 tsp white pepper
  • 1 tbsp cornflour
  • 1/2 cup water, plus extra for the steamer if needed.
  • Chilli oil, to serve
  • Extra spring onion, finely sliced, to serve

Prep

  • Set up a steamer basket over a pot of simmering water. Make sure the water sits below the steamer basket and the lid fits securely.
  • Lightly oil 4 medium heatproof ramekins or bowls.
  • Keep the dumpling wrappers covered with a clean tea towel so they do not dry out while you prepare the filling.

METHOD

  1. Add the Linley Valley Pork mince, garlic, ginger and spring onion to a large bowl.
  2. Add the light soy sauce, oyster sauce, Shaoxing wine, sesame oil, white pepper and cornflour.
  3. Mix until the pork filling is well combined and slightly sticky.
  4. Add a spoonful of pork filling to the base of each ramekin.
  5. Place one dumpling wrapper or wonton wrapper over the pork filling.
  6. Continue layering pork filling and wrappers until each ramekin is almost full., ensuring the final filling layer is pork.
  7. Divide the water between each ramekin so it settles through the layers, then top each ramekin with one final wrapper.
  8. Press the top wrapper down gently so it is moistened and slightly submerged.
  9. Place the ramekins into the steamer basket, cover and steam for 15–20 minutes, or until the pork is cooked through and the wrappers are tender.
  10. Carefully remove the ramekins from the steamer and allow them to cool slightly.
  11. Finish with chilli oil, extra spring onion and any desired sauce.
  12. Serve warm.

  • Do not overfill the ramekins, as the pork and wrappers need a little room to steam evenly.
  • Press each layer down gently as you build the dumpling lasagne. This helps the layers hold together and gives every bite that soft, dumpling-style texture.
