Giant Pork Sausage Roll

COOKING NOTES

Why make a regular sized sausage roll, when you could make a GIANT one? Using high quality Linley Valley Pork mince, this giant sausage roll is flaky, crunchy and full of flavour.

INGREDIENTS

1kg Linley Valley Pork mince
1 brown onion
1 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
1 tsp dried fennel
1 tsp salt
2 eggs
½ cup breadcrumbs
2 sheets puff pastry

METHOD

  1. Add Linley Valley Pork Mince to a mixing bowl along with one whole diced onion.
  2. Add spices, one egg and 1/2 cup of breadcrumbs and mix until combined.
  3. Lay out two sheets of puff pastry, shape the mince into a log on one side before rolling tightly until pastry ends meet.
  4. Brush with egg wash and score lightly.
  5. Place on a baking tray and into a 200C preheated oven for 45 minutes.
  6. Once the pastry has browned turn the oven down to 170C and continue cooking for a further 30 minutes until the meat has hit 75C internal temp.
  7. Slice and serve with classic tomato sauce or a nice tomato relish if you’re feeling fancy!
